Stuffed Bread

Ingredients

  • 1 large loaf of bread (we use Sourdough or Cheese Bread)
  • 1/4 lb of pepperoni
  • 1/4 cup shredded cheese
  • 1/4 lb thin sliced cheddar cheese
  • 1/4 cup leeks (or green onions of your choice)
  • 1 stick of butter (we use Kerrygold Irish butter)
Takes 20 mins, serves 8

Instructions

  1. Let the bread sit out overnight (a little stale/hard holds up better).
  2. Set the oven to bake at 325 degrees.
  3. Slice the bread lengthwise - DO NOT cut all the way through. Think blooming onion, how you can pull it apart, but its not really cut all the way down!
  4. Repeat slicing it widthwise - again not all the way through.Now your bread should look like it has cube pieces cut into it. 
  5. Stuff every cut/cube/cavity with a thin slice of butter.
  6. Then repeat this with the pepperoni, sliced cheddar cheese and anything else you want to add
    • sometime we make it Italian stuffed bread and add salami, mozzarella, etc. The combinations are limitless and can be tailored to your tastes.  
    • Add chorizo, jalapenos and taco seasoning for a more Latin inspired twist. 
  7. Once every crevice has been stuffed, lay about 5-6 tabs of butter on the top. The cover with cheddar cheese and leeks. 
  8. Wrap the bottom in foil (can see in picture above). You do not want to completely wrap the loaf in foil, or all the cheese on the top will be lost ☹ But you do want to hold the shape of the loaf so that it doesn't fall apart in gooey goodness when you move it to the table. 
  9. Place in oven for about 10 mins, or until the shredded cheese on top has melted. 
    • occasionally we will broil the top for the last 2 mins so the cheese on top bubbles! 
  10. Remove and let cool for about 5 mins, then grab a piece and enjoy!
