Breakfast Pizza

No one in my household is a morning person, and that meant breakfast during weekdays had resorted to quick high sugar foods...like pop-tarts! So as an alternative I stole an idea off Pinterest...Breakfast Pizza. 
The best part is every week you can make a different pizza because it is really all about the toppings!
We tend to use whatever random leftovers or smaller portion items we have in the fridge. Cut it up, put it in a container in the fridge and viola, a quick easy yummy breakfast. Below is an outline of the one we created above, but remember it's really up to you what you use.


Breakfast Pizza
Ingredients
  • 1 Pre-made Pizza dough
  • Prosciutto
  • Baby Asparagus
  • 3-4 Eggs
  • Shredded Cheese
  • 3-Cheese Pasta Sauce
Takes 20 mins

Instructions

  1. Utilizing flour, roll out your pizza dough to your desired shape - we like the more rectangular dough above. 
  2. Set the oven to bake at 350 degrees.
  3. Smear an even layer of the sauce onto the dough
  4. Build your pizza:
    • Add all the different toppings in your desired layered effect
    • We slice the asparagus into smaller bite sizes pieces
    • Where we crack the egg, we make a little "well" in the dough with a spoon so the egg kind of sits there versus spreading out 
    • We also added salt, rosemary and a little bit of balsamic vinegar on top of ours. 
  5. Place on oiled oven safe baking sheet and place in over for about 10 mins. 
    • This is one dish you need to constantly check on to ensure none of the topping burn etc. 
  6. Once the egg is almost all white (cooked), remove and sprinkle cheese on the top. Then place back in the oven for an additional 1-2 minutes. 
We've made this with left over taco meat, fresh tomato and some chili's/peppers for morning taco pizza. (We also still added the egss - it was delicious!)

There really aren't any limits!
