Simple Artichokes

Ingredients

  • 1 Whole Artichoke
  • 1 Lemon - cut into 4 pieces
  • 1 Lime - cut into 4 pieces
  • 1/4 Cup of Lemon Juice
  • Salt & Pepper
  • Olive Oil
Takes , serves 2.

Instructions

  1. If yours comes with the longer stem on it, reduce the length of the stem to about 1/2 inch then cut the Artichoke in half lengthwise (as shown in picture). Using a spoon, scoop out the fuzzy inside part that is found closest to the stem.
  2. Utilize any dish that is oven safe and will enable the liquid to cover most of the Artichoke. Squeeze all the juice from the lemon and lime pieces into the dish along with the lemon juice. Place the Artichokes inside, center pieces down and fill the pan with water until the liquid covers almost all of the Artichoke's (see picture). Let the artichoke's sit for at least an hour (I leave mine on the counter overnight covered loosely with tin foil).
  3. When ready, set oven to 365 degree. Remove the cover from the Artichokes and drain all remaining liquid. I squeeze any remaining juice from my lemons and limes onto the inside of the Artichoke. Lightly drizzle the bottom of the dish with oil and replace the Artichokes - still center side down into the over for 20 mins. Then turn the artichokes over so the center is facing up and place in oven for additional 10 mins.
  4. Remove and place on dish to cool for about 5 mins. Then work your way from the center pieces to the outside. I dip the "meat" portion of my artichoke in lemon juice and use my teeth to separate from the harder to eat exterior.
