Chocolate Pecan Sauce

Robbie's Chocolate Pecan Sauce with his favorite...RIBS!!

Robbie's Chocolate Pecan Sauce
Takes 15, Makes about 2 cups of sauce.

Ingredients

  • 1/2 cup of chocolate chips
  • 3 cups of Brown Ale (We used Evolution Craft Brewing "Southern Pecan Pie")
  • 3 tablespoons of onion jam (We used "The Jam Stand Sweet Onion Wino Jam")
  • 3 tabs of butter
Optional:
  • If you do not use Pecan Ale, add 3 large tablespoons of candied or regular pecans to the sauce at step 3. (you can add them even if you use Pecan Ale if you like them a lot!)
  • If you can't find the The Jam Stand, you can always caramelize onions and add them instead.

Instructions

  1. Utilize a double broiler (fancy word for two pots stacked on top of each other); fill the bottom half way full with tap water, and place half of the chocolate chips and 1 cup of brown ale in the top pot. Have the heat on medium and keep the bottom pots water at a low boil. Stir until all the chips melt.
  2. Add the rest of the chips, 1 cup of the brown ale and all of the onion jam. Stir again until everything melts together. 
  3. Finally add the rest of the ale and all the butter and stir until the butter melts. 
  4. Move the sauce to a regular non-stick pot on low heat. (We use Rachael Ray pots so that its an easy clean up and we don't lose any of our sauce to the sides of a pan!). Leave the sauce at a low boil until the sauce thickens and reduces by about an inch.  
  5. Serve on your favorite meat! - Robbie made his favorite ribs, bake at 350 degrees for 4 hours in tin foil. Then he adds about half the sauce to the ribs, re-wraps in the foil and replaces the ribs in the oven for an additional hour. Then pour the rest of the sauce over the ribs and enjoy!!
