Easy Cheesy Corn

Ingredients

  • 2 cans of sweet corn
  • 1 can diced tomatoes (or you can use about 2 cups of fresh diced tomatoes)
  • 1 tablespoon Herbs de Provence
  • 1 Teaspoon dried cilantro
  • 2 tabs of butter
  • 2 cups of shredded sharp cheese
Takes 45 mins, serves 8

Instructions

  1. In a large oven safe pan, drain and add the corn with tomatoes and stir.
  2. Then add the cilantro, Herbs de Provence and salt/pepper to taste.
  3. Stir thoroughly as you want the seasoning to evenly be distributed. Then place the tabs of butter on the top, cut into smaller pieces. (We used our rosemary herb butter - see previous post - to add a little extra flavor).
  4. Then top with shredded sharp cheese in a thick layer. To be honest, we probably used more than 2 cups because we love cheese! 
  5. Then cover with foil and place in 350 degree oven set to bake. Leave for about 20 minutes. 
  6. Then remove the foil and broil at same temperature with oven door cracked for about 5 minutes OR until the top of the cheese is bubbling (see picture above).
  7. Then remove, allow to cool and enjoy!
Tips:
  • Leaving our oven door open, helps the process stay even and smooth. When we closed it, the cheese bubbled and slightly burned at a much faster rate. 
  • Once you have the basics down, you can add ALOT to make this dish yours:
    • Bacon crumbled on top
    • Chorizo mixed in after browning 
    • Jalapenos and hot sauce
    • It is really up to what you have in the fridge and are in the mood for! - just NEVER skip the cheese!
